Tracy’s Red Wine Chili

A bowl of spicy yum!

This week’s cooler weather has left me yearning for all things warm!! I’ve always wanted to make a batch of my friend Tracy’s red wine chili and today seemed like the perfect day to give it a go. Boy am I glad I did…it’s amazing!!!

The ingredients are simple and easy to find but when combined make for the tastiest of chilis. This will be going into my regular rotation. It makes a TON of chili…I’m excited to freeze smaller portions and have them available to take to work for lunch or anytime the craving strikes!

Tracy’s Red Wine Chili
Prep Time: 15/20 minutes Cook Time: 6-8 hours on low

Ingredients:

1 to 1/2 lbs hamburger (or chop up a favorite steak)
Salt/Pepper
Garlic Powder
1 T Chili Powder
1 t+ Cayenne Pepper (Tracy says this is option, but if you like it spicy she says to be sure to add at least 1 teaspoon! I took her advice and added just shy of 2 teaspoons!!)
1 T Cumin (this was an addition by me. I just LOVE cumin in chili…so I tossed it in, too!)
1/2 cube butter
1 large onion diced
1 green pepper diced
1/2 C to 1 C of Cabernet Sauvignon
3 cans of fire roasted diced tomatoes (drained)
4 cans Chili Beans (drained) (I use Bush’s Mixed Chili Beans
 
Sauté the onion and green pepper in melted butter until the onion becomes translucent. Add to crock pot.
 
Brown the hamburger – or sear steak cut up into bite sized pieces – with salt, pepper, garlic powder, chili powder, cayenne, and cumin. Just eyeball the salt, pepper, and garlic powder according to your taste. Add to crockpot.
 
Mix together the browned meat and onion/green pepper mixture. 
 
Add the diced tomatoes, chili beans, and wine and stir the entire mixture together. Set crockpot to low and let it cook.

Serve with your favorite chili toppings – I love cheese, a dollop of sour cream, and some fritos! I also like to cut a couple slices of crusty bread to have with my serving. It was yummy to dip into the chili.
