Not sure I’ve tried a Baked by Rachel recipe that I haven’t loved! She has a great website full of ideas and posts a lot of them on Pinterest as well. I’ve been dying to try her Spicy White Chicken Chili and after waking up to rain this morning, today seemed like the perfect day!
I like spicy foods so I added every spicy component and to the max…and boy was it spicy!!! If you like things a bit milder, it would be easy to do – seed the jalapeños or add less or none at all, add just a pinch of the red pepper flakes or none at all, and/or add a bit less black pepper.
The prep on this one is very quick. Chopping the green pepper, onion, and jalapeno + measuring spices and opening cans. It also cooks in four hours on high which makes it a fun and quick crockpot recipe (use your lower setting if you need it to cook all day).
It’s such a hearty soup no need for bread or any crackers. I ate mine today without any toppings, but it would be YUMMY with a bit of cheese on top!
If you like your soup packed with heat…give this one a try sometime soon! It makes a TON of soup; I’ll be freezing quite a bit to enjoy throughout the fall.

Slow Cooker Spicy White Chicken Chili
A hearty white chicken chili, with a spicy kick! With the slow cooker doing all of the work, it’s a perfect meal for any night of the week.
Ingredients:
- 1 1/2lb boneless, skinless chicken breast
- 3/4C green bell pepper, chopped
- 3/4C yellow onion, chopped
- 1 Jalapeño, diced
- 3 cloves garlic, minced
- 3: 15oz cans Northern white beans, drained and rinsed
- 11oz can corn, drained
- 1 1/2 tsp dried oregano
- 1/8 tsp cumin
- 1/8 tsp cayenne, optional
- 1/2 – 1 tsp red pepper flakes, optional
- 1 tsp ground black pepper
- 2 tsp salt
- 32oz chicken broth
Directions:
Add all ingredients to the bowl of a 5-6 quart slow cooker. Cook on high for 4 hours. Remove chicken, shred and return to slow cooker. Divide among bowls. Serve with optional toppings such as cheese, jalapeño slices, sour cream, etc.
