
I found this recipe via Sweet Little Bluebird on Pinterest last week and couldn’t wait to try it. It is super easy and delicious!!! I pretty much made the recipe “as is” and had so much leftover that I have dinner for tomorrow night and a big bowl of the beans/meat/tomato mixture will be going into my freezer for future use. Lots of room for variation on this recipe – including all the possible toppings you could choose! This would be fun to serve as a “bar” with guests getting to make their own plates.

Ingredients
1 1/2 pounds lean ground beef
1 cup chopped onion (yellow or sweet)
2 cans (15.5 ounces each) Bush’s Best Chili Beans (pinto beans – mild chili sauce) – do not drain
8 ounce can tomato sauce
1 can Original Rotel (10 ounce can)
taco seasoning packet
1/2 cup water
Toppings:
- Fritos
- Rice (optional)
- Your choice of favorite taco toppings – cheddar cheese, lettuce, tomato, jalapenos, sour cream, hot sauce, avocado, fresh lime juice, fresh cilantro, etc.
Brown hamburger along with chopped onion. When meat is browned, add the taco seasoning packet and 1/2 cup water. Mix together. Place the beans, Rotel, and tomato sauce in the crockpot. Add the browned hamburger mixture and stir. Set crockpot for 3-4 hours on high or 5-6 hours on low.
To assemble: Place a layer of Fritos on your plate. Place a couple spoonfuls of rice on the chips. Top with bean/meat mixture (I used a slotted scoop to control the amount of sauce I wanted on my plate). Next add shredded cheese, lettuce, tomatoes, sour cream, etc…
