
This recipe is a combination of several recipes I found today. I combined all the things I liked best from each of them and created my own version! BEYOND happy with how it turned out. Super tasty and couldn’t have been simpler. The hardest part? Waiting the 1 hour and 40 minutes for it to cook. we’re so spoiled with speedy recipes in the Instant Pot, but this is worth the wait!
Ingredients
2 lb chuck roast
1 T salt, 1/2 teaspoon garlic powder, 1/2 T black pepper
1 T vegetable oil
1 onion roughly sliced
1/2 C red wine
1 bay leaf
1 minced garlic clove
1 T brown sugar
1 can favorite beer (I used pale ale)
1 beef bullion cube
1 T Worcestershire Sauce
1/2 T soy sauce
Sliced provolone cheese
Hoagie rolls (or any type of sandwich roll)
Directions:
Take beef out of refrigerator about 15 minutes prior to beginning to take the chill off. Set Instant Pot to Sauté. Season the roast with the combined salt, pepper, and garlic powder on all sides. When the pot is hot, add the vegetable oil and brown the roast on all sides.
Remove roast from the Instant Pot and add the sliced onions. Sauté for about two minutes. Add the red wine to the onions, deglazing the bottom of the pot by scraping the browned bits with a wooden spoon. Let the red wine cook down just a bit, about two minutes.
Then add the bay leaf, brown sugar, Worcestershire sauce, soy sauce, bullion cube, minced garlic, and beer to the pot. Give it a quick stir. Add the roast back into the pot and hit “cancel” to stop the sauté function. Place the lid on your Instant Pot and pressure cook the roast for 1 hour, 40 minutes. Let Instant Pot naturally release for 25 minutes.
Remove the roast from the Instant Pot and shred. Strain the liquid to use as the au jus.
To serve, toast your favorite rolls. I used hoagie rolls. I also put melted garlic butter on them before toasting, because…it’s the holidays! 😉 Place some of the shredded beef on the roll , a slice of your favorite cheese on top (I used provolone), and place under the broiler until the cheese has melted.
Serve with a favorite side and a bowl of the au jus…yummo!
