Sweet & Sour Apple Chicken Sausage

I’ve saved a bunch of different sausage and veggies recipes. This recipe is a combination of them with a few of my own twists included. It’s super easy to prep and can easily be changed up depending on the season and what you have on hand. Hope you enjoy it as much as I did!

Ingredients:

2 pkgs Sweet Apple Chicken Sausage (al fresco is my favorite brand)
3 peppers (I used yellow, orange & red)
1 onion
1 can pineapple chunks
1 1/2 C BBQ sauce
1/2 C brown sugar
Red Pepper Flakes
Cayenne
Cashews

Directions:

Cut the sausage links into rounds. Cut the onion and peppers into slices. Place sausage and veggies into crock pot. Add can of pineapple with juices. Add BBQ sauce and brown sugar. Add red pepper flakes and a bit of cayenne to your liking – this adds a nice little zip of heat to balance the sweet/sour. (Skip this step if would prefer no heat.)

Stir ingredients together. Place lid and set crockpot on low. Cook for four hours.

Serve over rice, noodles, or eat as is. Top with cashews for a little crunch.
