I‘m in love with my crockpot! For the longest time I’ve wanted to create a blog where I could keep track of my favorites along with any variations or changes I wanted to remember.
I pin ideas all of the time on Pinterest but needed a way to make notations or share easily with friends who don’t have a Pinterest account.
Along came Deena encouraging me one day to start a blog! I finally sat down and set one up and will be posting a new idea weekly (and occasionally more often when I have time).
So for my first post…here’s the recipe for Cashew Chicken (via Homegrown & Healthy) that I made for tonight’s dinner!

- 2 pounds boneless, skinless chicken thighs
- ½ cup soy sauce
- ¼ cup rice vinegar
- ¼ cup ketchup
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- ¼ teaspoon red pepper flakes
- ½ cup cashews
- 2 tablespoons cornstarch
- ¼ cup water
Instructions
- Place chicken in crock pot.
- Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl.
- Mix well and pour over chicken.
- Cook on low for 3 to 4 hours. (I prefer to keep mine in longer)
- About 30 minutes before serving, combine the water and cornstarch and add to the chicken; stir well and let the sauce thicken for the remainder of the cooking time.
- Just before serving add cashews and stir. Serve over rice.

It turned out great and the only small adaptations I made were to use a wooden spoon to break up the thighs before adding the cornstarch/water at the end of the recipe and I also added a bit more red pepper flakes than the original called for cause I like it bit of bite :). I served it over Jasmine Rice; accompanied with a spinach/fruit salad. It was yummy!!

I loved this recipe- thanks Elaine! I think next time I'll add carrots, onion & celery to the mix for some veggies included, but so glad to have this in my crockpot rotation!
