cashew chicken

I‘m in love with my crockpot! For the longest time I’ve wanted to create a blog where I could keep track of my favorites along with any variations or changes I wanted to remember.

I pin ideas all of the time on Pinterest but needed a way to make notations or share easily with friends who don’t have a Pinterest account.

Along came Deena encouraging me one day to start a blog! I finally sat down and set one up and will be posting a new idea weekly (and occasionally more often when I have time).

So for my first post…here’s the recipe for Cashew Chicken (via Homegrown & Healthythat I made for tonight’s dinner!
Crock Pot Cashew Chicken

Ingredients
  • 2 pounds boneless, skinless chicken thighs
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ¼ teaspoon red pepper flakes
  • ½ cup cashews
  • 2 tablespoons cornstarch
  • ¼ cup water
Instructions
  1. Place chicken in crock pot.
  2. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl.
  3. Mix well and pour over chicken.
  4. Cook on low for 3 to 4 hours. (I prefer to keep mine in longer)
  5. About 30 minutes before serving, combine the water and cornstarch and add to the chicken; stir well and let the sauce thicken for the remainder of the cooking time.
  6. Just before serving add cashews and stir. Serve over rice.

It turned out great and the only small adaptations I made were to use a wooden spoon to break up the thighs before adding the cornstarch/water at the end of the recipe and I also added a bit more red pepper flakes than the original called for cause I like it bit of bite :). I served it over Jasmine Rice; accompanied with a spinach/fruit salad. It was yummy!!

    I loved this recipe- thanks Elaine! I think next time I'll add carrots, onion & celery to the mix for some veggies included, but so glad to have this in my crockpot rotation!

    Thanks Elizabeth!! I love the idea of adding veggies. I'm going to try that next time, too…and I think I'll add baby bellas as well!
